When I began his graduate nutrition studies at New York University, I had a clear goal in mind – help people like YOU integrate nutrition into their lives in a way that is easy, interesting, and enjoyable.
I believe nutrition is much more than just the science of nutrients and the human body – it is a complex interplay of choices, emotions, taste, and health.
I doesn’t simply want you to know what foods are high in vitamin C or what the technical definition of fiber is. I encourage you to step outside your food box and explore new flavors, integrate healthy foods into your life, and never feel like you are putting a morsel into your mouth only because “it’s good for you.”

Foundational to my approach to dermatology is an understanding of how underlying states of health and disease manifest in the skin. Because I want my patients to not only look their best, but feel their best too, I take a holistic approach to optimizing the health and quality of the skin by also addressing the wellbeing of what lies beneath it. How? By including a discussion of the most effective, evidence-based, AND side-effect-free way to prevent and reverse inflammation and chronic disease — following a whole-food, plant-based diet! Why? Because I want my patients’ immune systems to not be so busy fighting dietary inflammation that they are prepared and able to stop new cancers themselves so my cancer-removing skills aren’t needed.
After doing a CO2 laser procedure to really turn-back-the-clock, I know that my patients following a plant based diet will have the added benefit of clear arteries to supply all the powerful antioxidants circulating from their meals filled with greens, beans, berries, and seeds to continuously support the newly-formed collagen from the inside-out. Additionally, whole-food, plant-based diets are unparalleled in their ability to boost fat loss while enabling lean muscle gain. This is particularly exciting for our patients seeking to jump-start their weight loss through CoolSculpting or increase their strength with the TruSculpt Flex as a whole-food, plant-based diet will not only help with immediate results, but help sustain a healthy weight and strong physique for years to come.

Read more…I have been a Physician Assistant since 2005. Currently working in Internal Medicine. In 2012 I had my own health problems despite heavy exercise, and what I felt was a healthy lifestyle. This prompted me to study the science of Nutrition. Once I saw the evidence I began transitioning to a whole food plant based diet. I got my health back, and then began sharing it with patients. By the end of 2020 I have taught using a food as medicine approach to over 1,500 patients, both in one on one appointments in the clinic, as well as in free classes to my community. I continue to teach and share this vital information, with any and all who are interested in taking control of their own health and wellness.

After improving her health and fitness through plant-based nutrition, losing 60 pounds and becoming an adult-onset athlete, she retired from her 20-year firefighting career to help people just like you. She works with people and organizations so they can reach their health and wellness goals.
Shortly after her father died from blood cancer in 2008, her state designated blood and other cancers as presumptive illnesses for professional firefighters, prompting Cindy to research how to reduce her personal cancer risk. She discovered that a whole food, plant-based vegan diet that eliminated the consumption of animal products could be key to her health and cancer prevention. Without going on a diet and just putting better fuel (food) into her body, Cindy dropped 60 pounds, 7 uniform pants sizes, 3 uniform shirt sizes, and dropped her cholesterol and blood pressure readings in one year.
Beyond looking better, her fitness level soared, and gave her new energy she could not contain. At the age of 38, Cindy became an adult onset athlete, competing and medaling in marathons, triathlons, open water swim races, and endurance events! Best of all, she’s been able to maintain this without dieting or feeling deprived!
Her fire department was so impressed by her transformation that they put her in charge of the newly formed Wellness Fitness Initiative, a collaborative program between the International Association of Firefighters and International Association of Fire Chiefs. Cindy is a decorated Fire Captain and paramedic, awarded Firefighter of the Year and Oregon State Paramedic of the Year. As part of the prestigious Executive Fire Officer Program at the U.S. Fire Academy, Cindy published original research on firefighter and public health and safety.
Our health and wellness is closely tied to the health of our environment. Cindy incorporates zero-waste and sustainable practices throughout her programs. You’ll see it IS easy being green!
Now that she’s retired from the fire service, Cindy shares her knowledge, experience, infectious enthusiasm for food, health, and fitness as a certified Health Coach, Vegan Lifestyle Coach and Educator, Fitness Nutrition Specialist, and Firefighter Peer Fitness Trainer through Trimazing! Health & Lifestyle Coaching. She is a Food for Life Instructor with the Physicians Committee for Responsible Medicine, Harvard Medical School Culinary Coach, and Rouxbe Plant-Based Professional, teaching people how to prepare delicious, satisfying, and health-promoting meals. I am a registered dietitian, American College of Lifestyle Medicine Practitioner and a Life/Weight Coach. I first learned about plant based medicine 19 years ago during my practicum at the Pritikin Longevity Center and have been passionate about the role food has in our health ever since, though I haven’t always been as spot on with my nutrition as I am today.
I can remember as a mom of young kids feeling mom-like and not in a good way. I was bursting out of my jeans. But worse than that, I felt too big for my skin. One day I noticed that my seatbelt was cutting into my stomach. That was a first. I remember thinking I’m a dietitian, I know better. I felt ashamed because I was preaching healthy eating, but I wasn’t always eating healthy. I was on the “one is never enough” plan and it showed on my body. I remember the phone call from my doctor’s office–bad labs. I thought, what am I doing? I know better. Then the shame fell away and I had a new feeling, conviction. I decided I was going to take care of myself and I started following my E.A.S.E. plan (which now I share with my clients).
E: eat greens
A: add fiber and color
S: subtract processed foods
E: exercise your mind and body
I felt healthier. No longer exhausted. I didn’t shove my words down with food anymore. I said what I was thinking instead of snacking. Now I weigh 102 lbs. My weight has stayed the same for over 10 years. Jeans slide on with no effort (except those double zeros!). I no longer fear the seatbelt. Now I help others do the same.

After reading ‘The China Study’ by T. Colin Campbell, I completed the eCornell University Plant Based Nutrition course in 2013.
