I have seen dramatic clinical and metabolic improvements in multiple patients, friends, and family members in the 2 years since embarking on my own personal journey towards plant based eating. In that time I have become certified in plant based nutrition through the T. Colin Campbell Center for Nutrition Studies and have become a diplomat of the American Board of Lifestyle Medicine to expand my knowledge and clinical skills necessary to effectively educate, council and help transform the llives of my patients. My husband and two young sons have transitioned to a plant based diet and have embraced this new way of life. My husband and I quickly noticed a big difference in our fitness levels achieving a higher level of fitness at age 41 than we both had as collegiate athletes. In addition to improved fitness, we have noticed improved flexibility, less muscle soreness, improved energy, and improved immune function.
As a non-invasive cardiologist practicing at large academic centers for the past 11 years I have watched my patients progressively suffer with recurrent myocardial infarctions, strokes, atrial fibrillation, and more frequent hospitalizations for heart failure despite my attempts at optimizing goal directed medical therapy and referrals for repeat invasive procedures and surgeries. Since I have incorporated lifestyle medicine and plant-based nutrition counseling into my practice over the past 2 years I have seen dramatic improvements in my patients health and well being while decreasing the amount of pharmaceuticals they take. As I enter the middle part of my career I have a new passion to cure and heal my patients with a combination of lifestyle intervention and traditional medicinal and procedural approaches when necessary. Dr. Niki Davis began eating plant based as a teenager but realized that, oftentimes, she was not following a healthy whole food diet. Through personal research, she learned that a whole food plant based lifestyle is the healthy way to approach nutrition for herself and her family. In fact, it was so important to her it was the reason she decided to go from being a “rocket scientist” (she previously worked as a mechanical engineer on the Space Shuttle program) to a family and lifestyle medicine board certified MD, graduating from the University of Utah School of Medicine in 2017. It’s nice to meet you on our journey to clean eating and a healthier lifestyle.
My health journey started over a decade ago, after the birth of my first son. At that time, I was constantly suffering from headaches, fatigue, migraines, lack of energy, chronic anemia, and a general feeling that I wasn’t in my best health. At that time, a friend of mine introduced me to a whole-food, plant-based diet.
Feeling desperate from having too much coffee and supplements but never really feeling energized, both my husband and I decided to give his recommendations a try. After three weeks, we started to feel better and much more energized. We even lost some weight in the process. I became much more focused and could maintain better concentration throughout my Engineering undergraduate studies.
This positive experience led us to decide to stick to this diet, which we are still practicing today. I consider this one of the best life decisions I have ever made. Feeling the effects in my body, I became an advocate for healthy nutrition. My biology background, and my service in the army as a medic, means I am comfortable digging into the details and learning more about these topics. For over a decade now, I eagerly study and expand my knowledge about healthy nutrition, and earned Master of Science in Nutrition (MScN) at National University of Natural Medicine (NUNM).
These days I’m offering nutrition counseling, classes, coaching, and recipes to promote healthier diet and lifestyle at my Just Eat Well practice. In addition, as a faculty adjunct member at NUNM, I’m teaching an immersive course about the Mediterranean Diet and the Israeli Culinary Culture.

Stephanie Peacock, D.C. is a virtual health coach looking to help patients optimize their life by transitioning into a whole food plant based diet. I have experience practicing in neurological surgery, trauma and emergency medicine, and family medicine. I am currently a professor and the Associate Program Director of the PA program at Rocky Mountain University of Health Professions in Provo, UT. As a candidate for a PhD in Health Promotion and Wellness, I am currently working on my dissertation centered on Lifestyle Medicine. Through my doctoral studies, I have had courses and developed skills in advanced nutrition, motivational interviewing, wellness coaching, population health interventions, and integrative therapies in wellness. My medical training, personal health journey, and doctoral education help me assist others in their own health and wellness journies.
Dr. Sobel earned her medical degree at the University of Chicago Pritzker School of Medicine. She completed her Intern year of Internal Medicine at New York Presbyterian Columbia Hospital in New York City and then finished the remainder of her Internal Medicine Residency at Loyola University Medical Center in Chicago. She completed her Fellowship in Diabetes, Endocrinology, and Metabolism at the University of Pittsburgh and stayed on as faculty within the Division of Endocrinology. She presently serves as Clinical Chief of Endocrinology at UPMC Mercy Hospital. Her academic interests include quality improvement initiatives addressing delivery of and access to latest diabetes evidence based care and she has been awarded both a Beckwith Innovation Grant as well as a Pitt Innovation Challenge Grant related to these academic interests. Her clinical interests include complex diabetes management, diabetes technology, obesity, and PCOS and now focuses on working closely with patients to understand the role of nutrition in improving health and reversing or remitting disease.
