Read more…Niki Davis, MD is a “rocket scientist” turned physician. She is board certified in both family medicine and lifestyle medicine. At age 13, she started removing animal products from her diet because she didn’t feel it was healthy. Once in college, she obtained bachelor and master degrees in mechanical engineering and worked on the space shuttle program for several years. However, instead of rockets on her mind, she was constantly thinking about health and nutrition – helping her own family members improve their health and their lives by switching to a plant based lifestyle. She eventually found her way back to her passion after leaving her engineering career to apply for medical school. She graduated from the University of Utah School of Medicine in 2017 and completed a Family Medicine residency program in 2020. While in residency, in addition to serving as Wellness Chief, she helped form Plant Based Montana, an advocacy group with the mission to educate healthcare providers and the general public about the benefits of a plant based diet. She has had the pleasure of speaking at plant based events around the country and has been lucky enough to train with phenomenal mentors such as Dr. John McDougall, Dr. Michael Klaper, Dr. Anthony Lim, and Dr. Alan Goldhamer, among others. Read more…It’s nice to meet you on our journey to clean eating and a healthier lifestyle. My health journey started over a decade ago, after the birth of my first son. At that time, I was constantly suffering from headaches, fatigue, migraines, lack of energy, chronic anemia, and a general feeling that I wasn’t in my best health. At that time, a friend of mine introduced me to a whole-food, plant-based diet. Feeling desperate from having too much coffee and supplements but never really feeling energized, both my husband and I decided to give his recommendations a try. After three weeks, we started to feel better and much more energized. We even lost some weight in the process. I became much more focused and could maintain better concentration throughout my Engineering undergraduate studies. This positive experience led us to decide to stick to this diet, which we are still practicing today. I consider this one of the best life decisions I have ever made. Feeling the effects in my body, I became an advocate for healthy nutrition. My biology background, and my service in the army as a medic, means I am comfortable digging into the details and learning more about these topics. For over a decade now, I eagerly study and expand my knowledge about healthy nutrition, and earned Master of Science in Nutrition (MScN) at National University of Natural Medicine (NUNM). These days I’m offering nutrition counseling, classes, coaching, and recipes to promote healthier diet and lifestyle at my Fabulous Healing practice. In addition, as a faculty adjunct member at NUNM, I’m teaching an immersive course about the Mediterranean Diet and the Israeli Culinary Culture. TAKING THE NEXT STEP I know first-hand how hard and challenging a lifestyle and diet transition can be—socially, emotionally— and most of all discovering out what works best for you and what does not. It takes a lot of practice, time, knowledge and support! Unlike many practitioners, we will take a deep dive into your health history and get to the root causes of your health issues. I specialize in clients struggling with yo-yo dieting, mindless eating, or those with lifestyle diseases such as cancer, heart disease, or diabetes for example.
I am a registered dietitian, American College of Lifestyle Medicine Practitioner and a Life/Weight Coach. I first learned about plant based medicine 19 years ago during my practicum at the Pritikin Longevity Center and have been passionate about the role food has in our health ever since, though I haven’t always been as spot on with my nutrition as I am today.
I can remember as a mom of young kids feeling mom-like and not in a good way. I was bursting out of my jeans. But worse than that, I felt too big for my skin. One day I noticed that my seatbelt was cutting into my stomach. That was a first. I remember thinking I’m a dietitian, I know better. I felt ashamed because I was preaching healthy eating, but I wasn’t always eating healthy. I was on the “one is never enough” plan and it showed on my body. I remember the phone call from my doctor’s office–bad labs. I thought, what am I doing? I know better. Then the shame fell away and I had a new feeling, conviction. I decided I was going to take care of myself and I started following my E.A.S.E. plan (which now I share with my clients).

S: subtract processed foods
E: exercise your mind and body
I felt healthier. No longer exhausted. I didn’t shove my words down with food anymore. I said what I was thinking instead of snacking. Now I weigh 102 lbs. My weight has stayed the same for over 10 years. Jeans slide on with no effort (except those double zeros!). I no longer fear the seatbelt. Now I help others do the same.
