I personally have seen the power of plant-strong diets in our patients with diabetes. Before starting that journey, we felt it was important to “live” vegan in order to “teach” vegan and encourage it. I along with several colleagues adopted a plant-strong or vegan lifestyle for 4 months. I learned more about flavors, and the culinary arts by living it and having the privilege of teaching it. As an RD, I’ve traded in my lab coat and plastic food models for real food and real life adventure!
